Thus, Brindos, Lake & Castle, a place of life open all year round, with its 29 cocoons, its 10 floating lodges, its 3 restaurant areas and its spa, opens its doors on April 15, 2022.

Brindos is one of the oldest houses in Labour. In the 1930s, when Sir Reginald Wright bought it, this lover of the Basque Country made Brindos a place of perpetual celebration. Dancing, beauties lounging in Chanel on the terraces in the sun, and the lake lending itself to all kinds of follies: the guests, when evening came, would go for a boat ride and contemplate the Castle. Serge Blanco, owner of the place since 2000, wished to preserve the historical heritage of this mythical place while bringing it modernity, elegance and comfort. Indeed, the international rugby player of the Biarritz Olympique is responsible for the masterly renovation of the castle. With its green setting and surrounding forest, the lake as far as the eye can see and its Hispano-Moorish inspired architecture, Brindos, Lac & Château is a holiday resort in its own right, both authentic and convivial. 20 years later, Millésime wishes to revive this mythical place.

Guided by its originsines from the Basque Country and an unconditional love of her region, Marie-Christine Mecoen, Artistic Director, has dreamed, imagined and created magnificent universes by preserving the character of the original building while giving it a new radiance.

Brindos, Lake & Castle : Elegant and unusual cocoons

Brindos, Lac & Château, is the largest house of the Millésime group to date. Marie-Christine Mecoen, wished to bring this magical place to life through its decoration.
Each material, each piece of furniture, each accessory, has been chosen to tell a story. The immensity and purity of the water, but also the woodwork of the Spanish Renaissance, the furniture of yesteryear and the origins of the place, inspired her reflections. Thus, the 29 cocoons and their bathrooms have been entirely revisited in a very
meticulous way: a fine mix of Millésime’s own DNA and nods to the Basque Country. As in the other rooms of the castle, the original furniture has been preserved (armchairs, sofas, woodwork…) and very often restored, and accompanied by a strong piece, symbol of modernity. Marie-Christine has surrounded herself with French designers, notably Jean-Vier for the creation of fabrics, curtains and tableware, Santano for certain pieces of furniture in gilded bamboo, Maison de Vacances for sofas, cushions and bed linen, Spiridon for the waterfall chandeliers and Mise en Demeure for floor lamps in the shape of a bunch of reeds. Many of the pieces were also found throughout France, even before the work began.

The lake is enhanced by the installation of 10 floating lodges in the form of independent rooms on the water, accessible only by small electric boats. An incomparable experience on one of the largest private lakes in France, in energy self-sufficient settings, with all modern comforts. The color code used echoes nature: green, terracotta, white… There is also a floating SPA-wellness area and a pontoon (restaurant area).

Brindos Lake and Castle: a friendly and generous culinary offer

The Executive Chef Flora Mikula defends a committed locavore policy, honoring local products and know-how, which she considers as a richness that we must protect and make last. This policy is reflected in the different restaurant areas of Brindos, Lac & Château. The panoramic restaurant, with its 180° view on the lake and its friendly atmosphere, offers a total culinary immersion in the purest Basque tradition, sprinkled with a touch of creativity. Flora Mikula has imagined a menu, executed by Chef Hugo De La Barrière, with unmissable and generous dishes: Iberian ham, pata negra cut on a spit, terrines
and pâtés en croûte… A fresh and seasonal cuisine, for a culinary journey of a thousand flavors. The products are selected in France and Spain. For dessert, it is Mathieu Mandard, pastry chef and champion of France for desserts (2004), who sets the pace with an original dessert menu (and carts!), composed of revisited classics: Chocolate and citrus cake, Basque beret, Basque cakes, seasonal fruit tart, millefeuilles, Paris Bayonne… All to be shared and cut up. The light dessert: The rum baba, and its staging, served with several toppings and alcohol to choose from.

The rest of the stay continues around the pontoon of the lake, with the Lounge, the Bar and the Pool; the new spot to party in the Basque Country, or for a moment for two.
A fine selection of spirits is on offer in the large lounge, carefully selected by the Head Sommelier. Sitting by the fireplace overlooking the glass roof, or
on the balconies, where you can discreetly overlook the central aisle: the art of seeing without being seen… Hungry? The lounge also offers a tapas bar, with creative, fun, exotic and sharing cuisine, inspired by revisited classics of the region: assortment of spreads to share with focaccia / corn bread / pita bread, corn hummus with yellow curry, various Iberian / Basque / cheese boards, chipirons or vegetables in tempura, octopus Galician style, mini crunchies and mini burgers, patatas bravas…

Brindos, Lake & Castle: Scottish lake

We pass by the Bar: a real Scottish bar, revised to the taste of the day but keeping all its original charm. It offers a cocktail menu based on authenticity, in a warm atmosphere, before admiring the lake from the pontoons. Then there is the swimming pool, facing the lake, where a wellness cuisine and a vegan and gluten-free offer is proposed: gourmet salads, tartars and ceviches, vegetable pizzetas, local cheeses, Italian ice creams, fresh juices with vitamins… This space can be privatized for barbecue evenings, cocktail parties or seminars.

The Chocolate Factory: an exclusive partnership with Cazenave

Millésime presents an exceptional collaboration with the emblematic chocolate maker of Bayonne, Cazenave. A step supported by the history of the region: chocolate was introduced in France, in Bayonne, by Spain in 1615 for the marriage between Louis XIII and Anne of Austria. It is therefore obvious that one must eat chocolate in Brindos!
Here, chocolate is discovered in all its forms and becomes a real spectacle since it is produced in front of the guests. La Chocolaterie also hosts breakfast and brunch, without any set schedule and open to both in-house and external clients, all year round. This gourmet meal is composed of local and homemade products: brioches, cakes, granolas, shortbread, cookies, cold cuts, dairy products, homemade smoked fish… During the snack, you will discover the famous sparkling hot chocolate, emblematic of the House Cazenave, served at the table.

Brindos Lake and Castle Spa

A spa and wellness area, in shades of water glass and gold, has also been set up in place of the former seminar area, inside the castle, and completely renovated. Where there were desks and chairs, there are now 4 treatment rooms, two of which are double. The wet area has 4 private pools and

a hammam, which includes its private duo cabin. The SPA extends onto the water with 2 floating duo cabins. At Brindos, Lac & Château, everything has been thought of for a solo, duo or family stay, with various activities to be booked: guided meditation classes, yoga classes for all levels and all desires, health trail around the lake, dance classes, and especially parents / children. A personalized sports coaching service, in the room or in the studio, outdoors or on the lake, is offered on request. The outdoor areas around the Château have also been developed: the green spaces, which had been completely abandoned for two years, have been completely restored.

opening of Brindos, Lac & Château is accompanied by strong commitments from an environmental point of view, for a more sustainable future. To this end, Millésime has implemented various actions in its latest House: reduction of waste, support of the local economy, provision of electric charging stations, 100% low consumption led light bulbs, installation of equipment in the room allowing the reduction of water use by the guests (double flow flush, foamers), sorting of waste and recovery by local farms.
